For starters, we are limited by how skilled the artists were at creating an exact representation. And there’s also the fact that many of them were drawing and sculpting famous and powerful figures, so they likely wanted to make them look as attractive and powerful as possible. Perhaps because they admired them, and perhaps because if they didn’t, they might be punished. We’ve lived with these images for centuries as the de facto visages of these historical figures.
